How to use the Protein Whipping Cream Schlagcreme
Preparation is simple: whip 50 g of powder with 150–200 ml of cold water, low-fat milk or an unsweetened plant drink in a tall bowl for 2–3 minutes with a hand mixer or stand mixer. The longer you whip, the firmer it gets. For cake fillings and frostings choose a firm consistency; for mousses or shake toppings a looser cream works fine. Important: don’t heat above 60 °C — proteins denature at higher temperatures and would clump.
